
Capo’s Classic Tiramisu (Inspired)
Ingredients:
- 6 egg yolks
- 1¼ cups white sugar
- 1¼ cups mascarpone cheese
- 1¾ cups heavy whipping cream
- 2 (12 oz) packages ladyfingers
- ⅓ cup coffee liqueur (like Kahlua)
- 1 cup strong brewed espresso or coffee (cooled)
- Unsweetened cocoa powder (for dusting)
- 1 oz semisweet chocolate (for shaving)
Instructions:
- Whisk egg yolks and sugar in a double boiler or heatproof bowl over simmering water. Stir constantly for about 10 minutes until thick. Remove and let cool slightly.
- Beat mascarpone into the egg mixture until smooth.
- In a separate bowl, whip heavy cream to stiff peaks. Gently fold into the mascarpone mixture.
- Mix the espresso and coffee liqueur in a shallow dish. Quickly dip each ladyfinger into the mixture (don’t soak), then layer in the bottom of a 9×13 inch dish.
- Spread half of the cream mixture over the ladyfingers—repeat layers.
- Cover and refrigerate for at least 6 hours or overnight.
- Before serving, dust with cocoa powder and top with chocolate shavings.
