Capo’s Classic Tiramisu (Inspired)

Ingredients:

  • 6 egg yolks
  • 1¼ cups white sugar
  • 1¼ cups mascarpone cheese
  • 1¾ cups heavy whipping cream
  • 2 (12 oz) packages ladyfingers
  • ⅓ cup coffee liqueur (like Kahlua)
  • 1 cup strong brewed espresso or coffee (cooled)
  • Unsweetened cocoa powder (for dusting)
  • 1 oz semisweet chocolate (for shaving)

Instructions:

  1. Whisk egg yolks and sugar in a double boiler or heatproof bowl over simmering water. Stir constantly for about 10 minutes until thick. Remove and let cool slightly.
  2. Beat mascarpone into the egg mixture until smooth.
  3. In a separate bowl, whip heavy cream to stiff peaks. Gently fold into the mascarpone mixture.
  4. Mix the espresso and coffee liqueur in a shallow dish. Quickly dip each ladyfinger into the mixture (don’t soak), then layer in the bottom of a 9×13 inch dish.
  5. Spread half of the cream mixture over the ladyfingers—repeat layers.
  6. Cover and refrigerate for at least 6 hours or overnight.
  7. Before serving, dust with cocoa powder and top with chocolate shavings.
